Vegan Alfredo

16oz pasta

Save 2/3 cups of pasta water (or veggie broth)

1 cup raw cashews or Brazilian nuts (boiled)

1.5 juiced lemon, or more

1tsp olive oil

1/2 red onion and 4 garlic cloves/ all sautéed

2 tbsp nutritional yeast

1/2 tsp black pepper

1tsp salt

Boil pasta, save a couple cups

Sauté onion and garlic with olive oil

Add all ingredients to blender + garlic and onion

Blend until smooth

Garnish with vegan Parmesan and parsley (or cilantro)
